In a flat-bottomed container, beat eggs and milk together until blended and smooth.
Stir in vanilla.
In a small bowl, mix together cinnamon, nutmeg, sugar, salt and flour.
Slowly add the flour mixture to the egg mixture, beating to avoid clumps.
Heat frying pan over medium heat and melt a Tbsp of butter to coat the pan well, add more butter if needed to coat the entire bottom
Dip one slice of bread at a time in the egg mixture, turning to coat.
Lift bread carefully out of the egg mixture and let it drain a little over the bowl, before transferring to the heated frying pan.
Cook for 3-4 minutes or until lightly browned before flipping.
Cook the other side until browned, about 3-4 minutes.
Repeat with remaining slices of bread, you may have bread or egg mix leftover depending on how fresh your bread is.
Serve hot with maple syrup.
