When we make this coleslaw, we serve it as both a side dish and a topping. It has become one of our favourite coleslaws because of its bold flavours. It is also a great coleslaw to pack for a picnic.

Ingredients For Dill Pickle Coleslaw

Making this coleslaw is fairly easy. All that is needed is a large bowl and the following ingredients.

  • Coleslaw mix.
  • Mayonnaise.
  • Dill pickles and the brine in the jar.
  • Dried dill.
  • Garlic powder.
  • Sea salt.

For the pickles, we use our homemade pickles.

How To Serve Dill Pickle Cole Slaw

There are many ways to use coleslaw. It makes a great side dish but there are also other ways to use it.

  • Wraps. Add coleslaw into wraps along with shredded or sliced meat. It adds crunch as well as flavour.
  • Pulled pork sandwiches. Coleslaw adds a creamy, crunchy and tangy flavour that balances out the flavours of the pork.
  • Tacos. This coleslaw makes a tasty topping for tacos instead of lettuce. The crunch and the salty, sourness of the pickles give tacos an extra flavour level.
  • Burgers. We love to add this coleslaw as a topping on burgers, especially turkey burgers.

Can Coleslaw Be Made Ahead?

Yes, coleslaw can be made ahead of time. We recommend making it about an hour or two before serving to allow the flavours to come together.

The cabbage in the coleslaw will soften as it sits and will become mushy after a day or two, so it is best to serve it within 12 hours of preparing it.

Storing Leftover Dill Pickle Coleslaw

Leftover coleslaw should be kept in the fridge in a covered container. It will stay fresh for up to two days.

Dill Pickle Coleslaw

Ingredients

  • 1 cup mayonnaise
  • 3 Tbsp dill pickle brine, from, the pickles.
  • 1 Tbsp dried dill
  • 1 tsp garlic powder
  • ½ tsp fine sea salt
  • 1 cup diced dill pickles
  • 400 grams coleslaw mix

Instructions

  • In a large bowl, whisk the mayonnaise, pickle juice, dried dill, garlic powder, and sea salt together.
  • Add the coleslaw mix and diced pickles.
  • Toss to coat.
  • Store covered in the fridge until ready to serve.
  • Stir before serving.

Notes

Shredded cabbage and carrots can be used in place of the coleslaw mix.
